The case

A 63-year-old woman who is apparently healthy albeit sedentary and reports a family history of acute myocardial infarction and stroke in her younger siblings, is requesting dietary advice. She is 163 cm tall and weighs 74 kg, thus yielding a body mass index of 27.9 kg/cm2. She decided to come to you as she has read a newspaper article claiming that eating red meat and pork is not necessarily unhealthy as long as you have a varied diet including fresh fish, legumes, and vegetables, but she doubts the veracity of this news.
